Leadtek WinFast PxDTV2300 H
The Leadtek WinFast PxDTV2300 H is a great for capturing composite, s-video or component.
This card will work in Windows 10 and can be put in a low profile case with the included low profile bracket. Its advantage is that it is PCI express so it can be used in modern systems which no longer have PCI slots.
It will do PAL 768x576 resolution so square pixel grabbing with 4:3 aspect ratio is possible.
The downside is that you must use the included 9 pin mini-DIN cable for video input capture. Make sure it has this if buying second hand. The cable from a Leadtek WinFast PxDVR3200 H is the same so it will also work with this card.
Other 9 pin mini-DIN cables from older Leaktek models with composite and s-video have also been tested to work.
It can also be used with other software such as VirtualDub2 including the 64 bit version when using 64 bit drivers.

Make sure you have the mini-DIN adapter cable though so that you can use all the various inputs.
